Steak 'n Shake, a fast food chain known for its smash-style burgers and beef tallow shoestring fries, has become the latest addition to the New Orleans Fair Grounds Race Course, introducing a national brand to concession stands long defined by local fare. 
The Fair Grounds announced the opening last week in an Instagram post featuring Steak 'n Shake's hand-spun milkshakes topped with whipped cream and maraschino cherries. 
Because the restaurant is located on the slots floor, guests dining with anyone under 21 can enter through the trackside doors, according to the post. 
Steak 'n Shake, however, was making smash burgers on a griddle long before the style became popular, according to the company's website. 
The chain opened its first location in Illinois in 1934, serving thinly pressed patties made from 100% grass-fed and grass-finished beef on a toasted bun. 
Today, the restaurant has hundreds of locations across the United States. 
Steak 'n Shake is among the latest entrants in the city's growing smash burger scene, where neighborhood restaurants specialize in thin, crisp-edged patties  a style that has risen in popularity in recent years and contrasts with the thicker burgers that long dominated American menus. 
Late last year, Bub's Burgers expanded to the Northshore after serving smash burgers for years at its Uptown and Mid-City locations. 
Months later, 2 Potnas, a former food stand, opened on Banks Street in Mid-City, serving several smash burger variations alongside french fries, onion rings and Zapp's potato chips. 
In April, Patty's Burger Bar quietly opened on Magazine Street in the Warehouse District.
